In 2017 my tiny family of three (mom and 2 little boys) grew to a boisterous family of 7 with 5 kids! Overnight my evening dinner routine turned upside down. Gone were the days of "girl dinners" with a kid friendly dish on the side. Here to stay were nights of rushing home from work, exhausted and ready for a glass of wine, only to see 5 pairs of eyes hungrily looking up at me wondering what's for dinner. And I confess, more times than I'd like to admit,  dinner ended up being an act of desperation- something fried, processed or just plain dialed in. And on top of the mom guilt of failing my kids nutritionally (ugh! why the mom guilt!?) there was daughter guilt of taking care of aging parents, friend guilt, workout guilt, book club guilt, clean house guilt- all of the guilts! There had to be a better way to take just one thing off my plate!

I tried mail order meal kits, but realized pretty quickly I was just paying for overpriced groceries to rot in my fridge. I tried take out but I didn't trust that I was feeding my family the nutrition they needed not to mention the cost.

And so with that, Busy Bea's Pantry was born. Nutritionally focused ready to heat meals with less packaging and no subscriptions. So go ahead, leave the meal planning to us tonight you already have enough on your plate.
